Eggplant or Brinjal or Kathirikai Oil Fry

Ingredients:

  • 2lb of Eggplant
  • 2 Tablespoon of Curry Powder
  • 2 Tablespoon of  Redchilli Powder
  • 5 Tablespoon of Oil (if required pour more oil)
  • Salt to taste

For Seasoning:

  • Little mustard
  • 1 Teaspoon of Uradhdal
  • 1 Teaspoon of  Channadal
  • Curry leaves

Procedure:

  1. Cut Brinjal length wise, keep it in water, so that  it doesn't turn to be black.
  2. Take a pan, heat it, pour oil, fry mustard seeds, uraddal, channadal to it.
  3. Put cut brinjal and then turn the gas to low flame.
  4. Till becomes soft keep it in a low flame pour oil as when necessary.
  5. Then add curry powder, redchilli powder and Salt.
  6. Till it blends and till it gets roasted keep it in pan.
  7. Then finally garnish with curry leaves

Note:

  • It goes well with rice and rasam /sambar.
