White Pumpkin Salad

Ingredients:

  • 1/2 lb of white pumpkin
  • 4 to 5  green chillies (according to your taste)
  • Salt as needed

For Seasoning:

  • Olive oil or Ghee
  • 1/2 teaspoon of mustard seeds
  • 1/2 teaspoon of urad dal
  • 2 teaspoon of coriander powder
  • Small pinch of asafoetida
  • Small pinch of turmeric powder
  • curry leaves
  • coriander leaves

Procedure:

  1. Take pumpkin and grate it with a grater and add salt.
  2. Take a pan, heat it and add little ghee or oil.
  3. Add mustard  seeds and after spluttering add uraddal, chopped greenchillies, coriander powder, turmeric powder, asafoetida and curry leaves.
  4. Finally Mix them well with pumpkin and garnish with coriander leaves

Note:

  • It reduces the blood cholesterol and prevents cancer and is delicious with rice.
  • All watery vegetables are good for health like watermelon, white pumpkin etc.
